Hi friend! I’m keeping it short this week on the intro and taking you straight into the meal plan. This is a good one, and I’m sharing this breakfast recipe with everyone this week (including my free subscribers!)
One hot tip: Pick up a container of mixed greens or romaine lettuce for the week. This is something you can easily make a simple side salad with, or add to your meals to increase the volume and add nutrients. Every week I get one bunch of romaine lettuce, chop it, rinse in the salad spinner, and store in said spinner in the fridge. We can add this to sandwiches, tacos, salads, and more. Romaine keeps longer than more tender greens, so this usually lasts a couple weeks. Give it a try!
How to Use This Meal Plan
This is a guide, not a rulebook. It’s here to help you build balanced meals, not lock you into anything rigid. Swap ingredients, make changes, take what you need, and leave the rest. ♥️
This plan follows my OKP Signature Method, designed to reduce decision fatigue and make the healthy choice the easy choice.
Here’s the structure:
• One breakfast you prep once and eat through the week
• One lunch you prep once and eat through the week
• One snack or dessert
• Three balanced, satisfying dinners that actually taste good (make enough for leftovers if you can!)
You’ll see ingredients repeat, that’s intentional. These are foods that consistently deliver lean protein, fiber, whole grains, nutrients, and flavor.
These recipes are designed to be meal-prep friendly. No soggy lunches by Wednesday, and no four-serving recipes for a five-day workweek (unless we change to a 4-day workweek, which I fully support 😊).
The goal is simple: get you through the week well-fed and happy.
These are the kinds of meals I eat week to week as a dietitian who focuses on feeling good. There’s enough variety to keep things interesting, but not so much that you need a brand-new grocery list every week. If you like something, bookmark it and make it again. Building a roster of go-to recipes is how you start cooking from memory, riff on your favorites, and make healthy eating sustainable long-term.
Eat well. Feel good. Repeat next week.
Breakfast: Sausage, Egg, Potato and Cheese Breakfast Casserole
Potatoes are the number one most satiating food according to research. We want to harness the power of the potato to make us feel full and satisfied all the way to lunch with this breakfast casserole. Potatoes get dragged by diet culture, but they are a high-quality carb (especially with the skin on), keep you full, are inexpensive, and versatile. They contain more potassium than a banana, 20-30% of your daily Vitamin C needs, Vitamin B6 (pyroxidine- do you think RFK Jr. can pronounce that one?) which helps energy levels, and they taste wonderful.
This casserole has the traditional flavors of breakfast with potatoes, eggs, cheese, and sausage, but we are making the ‘sausage’ from ground turkey to avoid the increased risk for colorectal cancer that processed meats like sausage, bacon, and deli ham incur. We are also lightening up the fat by using some whole eggs, and some egg whites, adding cottage cheese for extra protein, and of course making sure there is a veggie included.
You can always add cheese, change out the veggie (I used 2 green bell peppers, I’m an overachiever), add some hot sauce, make it your own!

Lunch: Mediterranean Farro Salad

This salad is the perfect lunch for this time of year. It’s hearty and grounding with the farro, but light and fresh too from the bell peppers, dill, parsley, and tomatoes. You will want to top this with 3 to 4 ounces (that you weigh out on a food scale) of chicken. This week I am using a rotisserie chicken, but I encourage you to use Mommy’s Special Chicken to add to this recipe.
Mommy’s special chicken tastes the best, is lower in fat than a rotisserie chicken, and it is truly just the best thing to have around in your fridge for last minute meals. I have perfected the process over years of trial and error, and all the info is in the PDF linked above. If you hate meal-prepped chicken, please give this a try, it’s not regular meal-prep chicken, its cool meal-prep chicken.
This chicken is also great on the grill if you’re into that! Instead of baking just grill on 350° F for about 20 minutes each side.
